This chili is pretty tasty, but the spices need to be amped up a bit. It's a hearty meal for sure and i made just a few changes and additions to it. I had an open can of beer in the fridge, so I decided to use that instead of the chicken broth. I also had about a 1/4 cup corn in the freezer and I wanted to use that too. Just a few small changes, but otherwise keeping the integrity of the dish. Let me know what you think!
Three Amigos Chili
1 tbsp olive oil
1 small onion diced
1lb ground turkey
1 can diced tomatoes (or use a can of Rotel style tomatoes and omit the green chiles)
1 small can green chiles
1 can chickpeas, drained and rinsed
1 can chickpeas, drained and rinsed
1 can kidney beans, drained and rinsed
1 can black beans, drained rinsed
1 can beer
1/4 cup frozen corn
1/4 tsp salt
1/4 tsp cumin
1/8 tsp cinnamon
Hot Sauce to taste
In a pot heat the oil over medium heat and cook the onion until soft (about 10 minutes). Add the turkey and cook for about 5 minutes. Add the tomatoes with the juice, all the beans, beer and corn and spices.
Stir and bring to a boil, then reduce the heat and simmer for 20 minutes. Divide into six servings and call it a day!
