Abs Diet- Chicken Soup for the Bowl

After being bored with salads and not able to find another 8 serving meal, I decided to go with chicken soup for lunch.  This chicken soup is packed with celery, carrots and brown rice.  The only thing missing is flax seed!  This soup is good, but make sure you taste it for salt, pepper and spice.  This soup does well with a little zip to it!

It heats well in the microwave and it's nice to just make one thing and then be done with it!

Chicken Soup for the Bowl

2 tsp olive oil
3 chicken breasts chopped
4 stalks of celery, diced
2 carrots, diced
1 onion, diced
2 cloves garlic, crushed
Salt and Pepper
2/3 cup brown rice
1 box of low sodium chicken broth or stock

Heat the oil in a large pot over medium low heat.  Add the celery, carrots and onion and cook until nice and soft (about ten or so minutes).  Turn up the heat to medium high and cook the chicken (about ten minutes) add the rice and then add the broth and seasoning and bring to a boil.  Lower the heat and simmer for 30 minutes.  Divide into 6 servings and done!
